I'm pretty sure chaos orbs DO NOT destroy ANY items directly by any effect, even the tasty ham drop. Most likely this is a rumor started due to the mechanic where elemental damage can destroy unbound stackable items. --Zt2211 04:09, October 16, 2011 (EDT)
You are correct in that they don't specificly destroy the hams.. What they actauly do is GIVE you the hams. You'll see something in the combat log "You benefit from xorian madness ham gift effect" it's a sort of rare funny joke effect that gives you a ham. You can run back and through the orbs in xorians for hours and you'll get a few hams for sure, or die a lot 
Edited the page noting this, and other drop locations.
But yea they also can be destroyed by the orbs.. Most any consumable, stackable item can be destroyed by any source of damage, tho it seems fire damage is much more likely to do so.
