What exactly should we consider to be bosses? Anything red- or orange-named that is a required kill to finish the quest? Or is there another definition that people have been using? Trying to figure out a standard definition since I have been creating a bunch of monster pages.

I'd say just use your best judgement. Theres no hard rule that will work i can think of. And yea orange named should be the minimum color type. Generally your idea (required killed) also usually matches, tho id say not always. I updated the template to allow for color type non bosses specificly for this reason, so try to use that when possibly (use color= ). Also ideally when you can, fill all fields. If you don't know like say attack, its a safe bet to just copy in the racial entry, looks cleaner that way and the pages never get much attention so its worth that imo.
Some examples:
Respawning Gnolls, entry trash efreeti/mephit in DQ on epic difficulties: Everythings red named, and the initial entry stuff is required kills.. But they are definetely not bosses. So they should use color equals red.
Or non boss orange: Bearded Devil Trooper -- all of these are orange named, but pretty much they are just tough trash monsters.
Rare orange/red named with actual unique named in most any quest or explorer area - Yea id use the boss field. (also set rare=yes.) In this case they usually aren't required kills. But they are generally much harder then the trash around them, which imo makes them bosses or minibosses.
Purple named I'd say are generally always bosses. Least bossish type is probably some of the things in the new lolth raid, but id call them all bosses regardless.
